My Favorite Pesto With Lemon Zest |

This is far and away my favorite version of pesto because it has lemon zest. The flavor is incredibly crisp and fresh. My kitchen smells so wonderful and like summer each time I make it. I try making batches to freeze but it doesn't last long there, either. Ingredients:
2 bucnches of fresh basil, about 3 - 3 1/2 cups leaves |
2 medium cloves of garlic or 1 huge one |
2 tbsp parsley |
1/2 cup extra virgin olive oil |
1/2 cup freshly grated parmesan cheese |
grated zest of 1 large lemon |
1 tbsp pignoli nuts |
Directions:
1. Put all of the ingredients in the work bowl of the food processor and blend until the deisred consistency. |
