I absolutely love making frittatas! They are so easy and a great way to use up leftovers. This is my family's favorite. Ingredients:
6 lg. eggs |
1- 1 1/2 c. diced cooked ham |
1 - 1 1/2 c. steamed broccoli |
1/2 c. shredded swiss cheese |
2 tbs. unsalted butter |
Directions:
1. Preheat oven to 400 degrees F. 2. Heat butter in a 12 inch skillet over medium heat. 3. Beat eggs in a medium bowl just until well blended. 4. Add ham and broccoli to the eggs and gently mix to coat. 5. Pour the egg mixture into the skillet and gently spread around. 6. Sprinkle Swiss cheese on top. 7. Cook on the stove-top just until the bottom is slightly set. 8. Remove from stove and place in warmed oven. 9. Bake for about 10-15 minutes or until the eggs are cooked through. 10. Sprinkle with salt and pepper and serve immediately. 11. Note: You could mix the cheese in with the ham and broccoli, but I found myself scraping it off the side of the bowl, making it more work than I wanted. |
