These are my favorate cookies, I use to make them for my father when he was ill, and my children really enjoy them. Ingredients:
3 c lightly packed brown sugar |
1 1/2 c margarine soft not melted |
2 eggs |
1 tsp vanilla |
1 tsp salt |
1 tsp baking powder |
2 c flour |
1 c shredded coconuts |
1 c raisons (optional) |
2 c quick oatmeal |
Directions:
1. Cream sugar and margarine till smooth 2. Add eggs and vanilla; mix well 3. Add salt, baking powder, flour 4. Fold in coconuts, raisons (optional), oatmeal 5. Using a tablespoon; scoop your portions onto a non stick cookie sheets; 2 inches apart. 6. Bake at 325 for 7 - 10 min. Until you see your bottom edges golden 7. Let cool for 2 min. before removing from cookie sheets. |
