My adaptation of a few recipes to make a quick yummy clam potato chowder single serving. I used fresh cooked cockle clams we harvested at the coast this weekend. :) times and measures are guesstimates. Ingredients:
1/8 teaspoon mustard powder |
1/8 teaspoon coriander powder |
1/8 teaspoon ground allspice |
1/8 teaspoon dill weed |
1/8 teaspoon ground cloves |
1/8 teaspoon crushed red pepper flakes |
1/4 bay leaf |
1 medium potato |
1/4 cup clam |
1 cup water |
1/4 cup milk |
1/2 teaspoon chicken bouillon |
1 teaspoon olive oil |
2 tablespoons green peppers |
2 tablespoons celery |
2 tablespoons onions |
1/4 teaspoon garlic |
1/2 cup asparagus |
1/4 cup corn |
1 1/2 tablespoons cheddar cheese |
Directions:
1. chop potato, put in bowl with a tsp water cover and microwave, stirring occassionally until tender. 2. meanwhile, saute veggies in olive oil. 3. Once tender add everything bring to a boil. 4. let cool and enjoy. |
