A yummy, easy to put together, very tasty chicken salad!
Ingredients:
1-med.size store bought rotisserie chicken
2/3 cup chopped celery
1/2 cup chopped sweet onion
1/4 cup chopped red onion
2/3 cup any type seedless grapes. we like the dark ones.
(cut in half, lengthwise)
1/2 cup low fat (unseasoned) yogurt
1/2 cup (good quality) mayonnaise
salt and pepper to taste.
options
you may add any of these if desired
(the cooked chicken is seasoned quite well.)
fresh dill weed for color and flavor
raisins
chopped nuts
1/4 cup brown sugar if you like it sweeter.
Directions:
1. (chop the size that your family likes)..We like pieces about 3/4' in size.
2. Remove all bones, fat and most of the skin.
3. Prepare mild onions, celery, and any other items you wish to add
4. (chop about med. size).
5. Lightly toss ingredients.
6. I usually have my vegetables and (fruit) pre-cleaned and cut.
