Got this from a friend a very long time ago. Ingredients:
2 cups flour |
2 teaspoons baking soda |
2 teaspoons cinnamon |
1/2 teaspoon salt |
1 1/2 cups sugar |
1/2 cup currants (raisins) |
1/2 cup coconut |
1/2 cup nuts |
1 cup canola oil |
3 eggs |
2 cups carrots, grated |
Directions:
1. Preheat oven to 350. 2. Mix dry ingredients. 3. Add currants, coconut and nuts. Mix. 4. Mix oil and carrots and add to dry. Mix. 5. Put in loaf pan (or any shape you want). Let it stand for 20 minutes. 6. Bake 1 hour. 7. Cool and remove from pan. 8. Keeps for 2 weeks. |
