There are many ways to cook Boston style baked beans, but this one is my favorite. Rich flavor, heavy on the molasses and just hearty...good stuff! Ingredients:
1 lb navy beans |
1 lg onion - quartered and separated |
1/2 lb thick cut bacon (or salt pork)- cut to 1 inch pieces |
1/2 cup molasses |
1/3 cup brown sugar |
2 tsp mustard powder |
2 tsp salt |
1 tsp pepper |
2 cloves garlic - smashed and chopped |
1/4 cup ketchup |
Directions:
1. Soak Beans over night in 6 - 8 cups water 2. Boil 2 mins -Strain & Reserve 6 cups liquid 3. Mix all ingredients with the water, except the bacon and onions 4. In the dutch oven, layer: bacon/beans/onion/bacon/beans 5. Pour the sauce over the beans. The liquid should just about cover them 6. Preheat oven to 300 7. While the oven is heating, being the beans to a boil on the stove top 8. Cover & bake in the oven for 6-8 hours, depending on how tender you like them |
