My Big Fat Greek Pasta Salad |

another dish popular on my buffet tables Ingredients:
1 lb bow tie pasta |
1 cup frozen peas, thawed |
1 cup baby spinach |
1 cup shredded carrot |
1 cup diced zucchini |
1 cup extra virgin olive oil |
1/2 cup white wine vinegar |
1 lemon |
3 sprigs fresh mint |
2 tablespoons all purpose greek seasoning |
2 tablespoons sugar |
2 garlic cloves, minced |
2 green onions, diced |
1/2 lb crumbled feta cheese |
Directions:
1. cook pasta til al dente. Drain. 2. add veggies to pasta. 3. for dressing assoil, vinegar, lemon juice, seasoning, sugar and garlic. 4. toss in pasta. 5. top with lemon zest,chopped mint and cheese. 6. chill. |
