A very filling, and tasty, winter-time stew. Ingredients:
1 tb vegetable oil |
1 1/2 lb pork loin roast boneless; cubed, 1 inch |
3 md carrot; 1/4 inch slices |
1 md onion; chopped |
2 c parsnips; 1/2 inch cubes |
1 1/2 c butternut squash; 1 inch cubes |
4 c chicken broth |
1 ts dried sage |
3/4 ts thyme leaves |
1/2 ts salt |
1/2 ts pepper |
3 tb flour |
3 tb butter |
Directions:
1. Heat oil in 10-inch skillet over medium-high heat. Cook pork in oil 6 to 8 minutes, stirring occasionally, until browned on all sides. 2. Mix pork and remaining ingredients except flour and butter in 3-quart slow cooker. 3. Cover and cook on low heat setting 6 to 7 hours. 4. mix flour and butter; gradually stir into stew until blended. Increase heat setting to High. Cover and cook 30 to 45 minutes, stirring occasionally, until thickened. 5. Substitution: Can remove parsnips and add 2 more sliced carrots (if you absolutely must ;-). |
