This recipe came about from trying different ways to prepare grouper. Taking a little of this and then some more from other recipes, I came up with this one that is our favorite. We really enjoy the taste of this and especially the extra crispness when it is finished in the broiler. Yes, you can just bake it if you don't like using a broiler. Paprika may be substituted for Old Bay Seasoning. Note: If broiling, Do NOT omit the mayonnaise as it prevents fish from being dry. Ingredients:
2 lbs grouper fillets, skined |
1/4 cup olive oil |
2 tablespoons fresh lemon juice |
1/4 teaspoon onion powder |
1/4 teaspoon garlic powder |
1 tablespoon finely minced parsley |
1/4 teaspoon black pepper |
1/4 teaspoon old bay seasoning |
1/3 cup plain fine breadcrumbs |
2 -3 tablespoons light mayonnaise |
Directions:
1. Prepare your baking pan or broiler with Pam. 2. Preheat oven to 350 degrees. 3. In a small dish, combine onion powder, garlic powder, minced parsley, black pepper, and Old Bay. Reserve. 4. In another small dish, combine the olive oil with fresh lemon juice. Reserve. 5. Brush 2 tablespoons of the olive oil mixture on both sides of the fillets. 6. Sprinkle both sides of the fillets with dry spice mixture. 7. Sprinkle both sides of the fillets now with fine breadcrumbs. 8. Bake fillets about 10 minutes; brush with remaining olive oil mixture and spread with mayonnaise. 9. Broil until fish flakes easily; depending on thickness of fillets this can be from 3-6 minutes or so. 10. Enjoy! |
