Delicious and easy cold shrimp party appetizer! Ingredients:
2 1/2 lbs. cooked cleaned shrimp |
1/4 cup chopped parsley |
1/4 cup chopped shallots |
1/4 cup tarragon vinegar |
1/2 cup olive oil |
4-5 tble. dijon mustard |
2 tsp. crushed red pepper flakes |
1 tsp. salt |
ground black pepper |
Directions:
1. Peel, devein and steam shrimp. Mix together the rest of the ingredients. Pour over cooked shrimp, marinate, and refrigerate for 6 hours. Serve. 2. Recipe doubles well. |
