Ingredients:
1 tablespoon olive oil |
1/2 medium-size sweet onion, finely chopped |
1 cup peach preserves |
3/4 cup chopped dried peaches |
1/4 cup coarse-grained dijon mustard |
1/4 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Heat oil in a large nonstick skillet over medium heat. Add onion, and cook, stirring often, 5 to 6 minutes or until onions are golden brown. Remove from heat, and stir in preserves and next 4 ingredients. Cover and chill 1 hour or up to 1 week. |
