Mustard Mashed Potatoes With Red Onion Gravy |

A delicious switchup to your regular potatoes & gravy Ingredients:
1 tbsp olive oil |
1 red onion;thinly sliced |
2 tsp brown sugar |
2 lb potatoes; peeled and cut into chunks |
1 tbsp flour |
1 1/4 cup beef stock |
1/4 cup red wine |
1 tbsp worcestershire sauce |
1/4 cup milk; warmed |
3 1/2 tbsp butter |
3 tsp whole grain mustard |
Directions:
1. Heat oil in frying pan 2. Add onion and sprinkle with brown sugar 3. Cook gently, stirring from time to time until onion is lightly carmelized 4. Boil potatoes in lightly salted water until tender 5. Sprinkle flour over onions 6. Stir & cook 1 minute 7. Stir in stock, wine and worcestershire sauce 8. Boil and then reduce heat and simmer. 9. Drain potatoes and return to pot. 10. Mash with warm milk, butter and mustard 11. Spoon mound of mashed potatoe on each plate and top with gravy. |
