I love potato salad but I am forever adding mustard. Although I know there are tons of ways to make potato sald this is my favorite way to do it. Serving this with BBQ'd grilled chicken breasts is just SOOOOO yummy.
Ingredients:
8 large potatoes
1/4 cup mayonnaise
2 tablespoons mustard (even more if you like)
2 hard-boiled eggs
2 stalks celery, finely chopped
green onion (as much as you like)
1/4 lb cooked bacon (crunchy and crumbled)
1/2 teaspoon cayenne pepper
salt and pepper
Directions:
1. Peel potatos and dice into bite sized peices.
2. Put potatos in pot of water and set on medium high heat to boil.
3. While potatos are cooking, cook and crumble your bacon and reserve 2 tbsp of bacon grease.
4. Chop the eggs, celery and onion and set aside.
5. Stir cayenne pepper into mayountil well blended.
6. When potatos are cooked to soft add bacon, grease, mustard, mayo, chopped items and as much salt and pepper as you like.
7. Chill in fridge for at least 1 hour, 2 hours will alow the flavor to blend better.
8. Optional: You can add more mayo if you like your salad a little creamier.
