We assigned our highest flavor rating to this easy recipe. All you do is spread on a paste of spices, Dijon mustard, and lemon juice, then broil the chops. Ingredients:
2 garlic cloves, minced |
1/2 teaspoon pepper |
1/4 teaspoon dried thyme |
1/8 teaspoon salt |
2 teaspoons fresh lemon juice |
2 teaspoons dijon mustard |
1 teaspoon olive oil |
4 (5-ounce) lean lamb loin chops |
cooking spray |
Directions:
1. Combine garlic, pepper, thyme, and salt in a small bowl; mash with back of a spoon until mixture forms a paste. Stir in lemon juice, mustard, and olive oil. 2. Preheat broiler. 3. Trim fat from chops. Spread garlic mixture over both sides of chops. Place chops on rack of a broiler pan coated with cooking spray. Broil 5 1/2 inches from heat 6 to 7 minutes on each side or to desired degree of doneness. |
