I do like using bread crumbs made at home from either a winter wheat bread of a dense whole wheat bread. Ingredients:
4 boneless skinless chicken breasts, large |
1 cup dry breadcrumbs |
1 teaspoon dijon mustard |
3 tablespoons honey |
2 tablespoons dijon mustard (yes, again!) |
2 tablespoons unsalted butter |
Directions:
1. Flatten chicken to 1/4-inch thickness. 2. In a shallow bowl, combine bread crumbs & 1 teaspoon of the mustard. 3. In another shallow bowl, combine honey & remaining mustard. 4. Dip flattened chicken breasts in honey/mustard mixture & then coat each with crumbs. 5. In a nonstick skillet, melt butter & cook chicken over medium heat 4-6 minutes on each side or until chicken juices run clear. 6. Enjoy! |
