MUSTARD BEAN PICKLES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Amine Estate in Texarkana, Texas in 1990. Ingredients:
5 pounds beans cut and cooked until tender |
3 cups vinegar |
4 tablespoons mustard |
2 cups water |
4 cups white sugar |
1 teaspoon turmeric |
8 tablespoons flour |
1 teaspoon pickling salt |
Directions:
1. Mix all dry ingredients then mix in water. 2. Add vinegar and bring to a boil stirring gradually until thickened. 3. Pour over beans and heat and seal in sterilized jars. 4. Process according to manufacturers instructions. |
