Mustard / Apricot Jam Chicken |

This recipe is very flexible, you can add more or less of anything depending on your taste. My family likes spicey and I usually eye things so feel free to change anything. Ingredients:
3/4 cup honey dijon mustard |
1/2 cup apricot jam |
1 teaspoon garlic powder |
2 cups breadcrumbs |
ground black pepper |
salt (optinal) |
8 pieces skinless chicken |
Directions:
1. Preheat oven to 350. 2. Mix mustard, jam and garlic powder. Set aside. 3. Mix bread crumbs, pepper and salt in a zip lock bag. Coat both sides of the chicken with the mustard/ jam mixture. Put chicken in zip lock bag and shake till evenly coated with bread crumbs. Shake off extra bread crumbs. 4. Place chicken on a greased baking sheet. 5. Bake for an hour uncovered. |
