Mussels in Rich Tomato Broth |

2 teaspoons vegetable oil |
2 spanish onions, chopped |
2 garlic cloves, crushed |
1 pinch saffron threads soaked in 1 tblsp hot water |
1 kg mussels, scrubbed, beards removed |
2 cups tomato juice |
1 cup dry white wine |
2 tablespoons brown sugar |
2 teaspoons finely grated lemon rind |
3 tablespoons basil, chopped |
Directions:
1. Heat oil in wok over medium heat. 2. Add onions and garlic, stir fry for 3 minutes or till onions are golden. 3. Add saffron mixture and stirfry for 2 minutes more. 4. Add mussels, juice, wine, sugar, lemon rind. 5. Bring to boil, reduce heat, simmer 10 minutes. 6. Discard any unopened mussels. 7. Stir in basil and serve. |
