Mussels in Rich Tomato Broth

Ingredients:
2 teaspoons vegetable oil
2 spanish onions, chopped
2 garlic cloves, crushed
1 pinch saffron threads soaked in 1 tblsp hot water
1 kg mussels, scrubbed, beards removed
2 cups tomato juice
1 cup dry white wine
2 tablespoons brown sugar
2 teaspoons finely grated lemon rind
3 tablespoons basil, chopped
Directions:
1. Heat oil in wok over medium heat.
2. Add onions and garlic, stir fry for 3 minutes or till onions are golden.
3. Add saffron mixture and stirfry for 2 minutes more.
4. Add mussels, juice, wine, sugar, lemon rind.
5. Bring to boil, reduce heat, simmer 10 minutes.
6. Discard any unopened mussels.
7. Stir in basil and serve.
