Dark maple syrup gives these beans a lovely Canadian twist. Ingredients:
1lb dried white beans |
11 c water |
1/2 lb chopped bacon |
1 large onion, chopped |
2 cloves garlic, minced |
1 c ketchup |
2/3 c dark maple syrup |
1 tbsp molasses |
1 tbsp dijon mustard |
1/2 tsp chili flakes |
1/2 tsp worcestershire sauce |
pinch baking soda |
Directions:
1. Wash and sort beans. Pour 6 cups of water over them in a large saucepan. Let stand overnight. 2. Bring the beans to a boil and boil for two minutes. Drain and add 5 cups of water. Boil again and reduce heat. Cover and simmer for 1/2 hour. Drain and reserve 1/2 cup of water. 3. Sauté the bacon until not quite crisp. Add the onion and garlic and cook until soft. 4. Preheat oven to 250F. 5. In a large casserole with a tight lid, place the onions, garlic, bacon, beans and the pan drippings. Add the reserved water and remaining ingredients. Mix well. 6. Cover and bake, stirring occasionally, for 2 hours. Uncover and bake until tender and slightly thick, about another 30 minutes. |
