From Bon Appetit, Tastes of the World, 1996. This is Italian. Don't want to lose it. Ingredients:
2 tablespoons butter |
2 tablespoons olive oil |
6 garlic cloves, large, flattened |
1 1/4 lbs mushrooms, halved, quartered if very large |
1 cup dry white wine |
salt |
pepper |
fresh italian parsley, shopped |
Directions:
1. Melt the butter and the oil in a heavy large skillet over medium-high heat. 2. Add garlic and saute until beginning to brown, about 2 minutes. 3. Using a slotted spoon remove and discard garlic. 4. Add mushrooms and saute until golden brown and the juices evaporate, about 15 minutes. 5. Add wine and simmer until reduced to glaze on mushrooms, stirring occasionally, about 10 minutes,. 6. Season mushrooms with salt and pepper; add parsley and serve. |
