Mushrooms/ Smoked Salmon Bruschetta |

I make this all the time. It is easy and versatile, you can absolutely adapt each paste recipe to your taste. Ingredients:
mushroom paste |
1 tbsp lemon |
1 cup sauteed wild mushrooms (quick sautee in 1 tbsp olive oil, sall, pepper and 3 tbsp white wine) |
4 tbsp cream cheese |
1 tbsp parmesan cheese, grated |
smoked salmon spread |
1/2 cup smoked salmon |
1/4 cup cream cheese |
1/2 tsp lemon zest |
1 tbsp lemon |
white pepper to taste |
1 loaf of good italian bread |
olive oil |
Directions:
1. Slice the bread and drizzle with olive oil. 2. Put the slices in the oven and broil until toasted with a golden color, this should take about 5 minutes in a hot oven, keep an eye on them so they won't burn. 3. Make the pastes by mixing the ingredients of each one in a food processor. (1st make the mushroom paste, wash the container and then 2nd the salmon paste) 4. Spread an even amount of paste on each slice. 5. Arrange the slices in plates and serve. |
