Ingredients:
butter-flavored vegetable cooking spray
8 ounces fresh mushrooms, halved
1 tablespoon chopped green onions
1 tablespoon chopped fresh parsley
2 teaspoons dry white wine
1/8 teaspoon salt
1/8 teaspoon pepper
2 tablespoons low-fat sour cream
2 (1-ounce) slices white bread, toasted and cut in half diagonally
Directions:
1. Coat a medium nonstick skillet with cooking spray; place over medium heat until hot. Add mushrooms and green onions; saute 3 minutes or until tender. Add parsley, wine, salt, and pepper; saute 1 minute. Remove from heat; stir in sour cream. Spoon mushroom mixture evenly over toast, and serve immediately.
