I got this from the Woman's Day Encyclopedia of Cooking. Tasty! Ingredients:
1 lb fresh mushrooms |
3 tablespoons butter or 3 tablespoons margarine |
2 tablespoons sliced celery |
1 tablespoon onion juice |
1/8 teaspoon paprika |
1 tablespoon flour |
1 cup hot medium cream |
1 tablespoon fresh orange juice |
1 tablespoon grated orange rind |
1 tablespoon white grape juice or 1 tablespoon sherry wine |
salt |
pepper |
cayenne |
ground nutmeg |
Directions:
1. Wipe mushrooms with damp cloth; remove stems. 2. Melt butter in pan; add mushrooms, celery, onion juice, and paprika. 3. Cover; simmer until mushrooms are tender. 4. Stir in flour. 5. Add cream; cook for a moment more. 6. Add orange juice, rind, and grape juice. 7. Season to taste with salt, pepper, cayenne, and nutmeg. 8. Serve in individual dishes, on toast, or in croustades. 9. Makes 4 servings. |
