1 lb mushroom |
1/2 cup dry vermouth |
1 tablespoon olive oil |
5 tablespoons red wine vinegar |
2 tablespoons lemon juice |
1 garlic clove, minced |
2 tablespoons shallots, chopped |
1 tablespoon fresh basil, chopped |
1 teaspoon sugar |
1/2 teaspoon dry mustard |
1/2 teaspoon pepper |
salt |
Directions:
1. Place mushrooms in a large jar with a tight fitting lid. 2. Process the remaining ingredients, except salt, in a blender until smooth. 3. Pour mixture over mushrooms. Season to taste with salt. 4. Seal jar and refrigerate 1-2 days for flavors to develop. |
