This is a medieval recipe originated by Menagier de Paris. This translation is based upon one by Janet Hinson. She calls for parmesean cheese but cheddar works well too. If you don't have grains of paradise you may substitute some fresh ground black pepper. Ingredients:
1 lb mushroom, sliced |
9 ounces cheese, grated |
1 tablespoon olive oil |
1/4 teaspoon ground cinnamon |
1/8 teaspoon ground cloves |
1 teaspoon ground ginger |
1/8 teaspoon grains of paradise |
1/4 teaspoon sugar |
1 (9 inch) pie crusts |
Directions:
1. Preheat oven to 350 degrees. 2. Grind grains of paradise. 3. Mix cinnamon, cloves, ginger, sugar and ground grains of paradise. 4. Mix mushrooms, 2/3 of cheese, spices and oil. 5. Put mixture into crust, put remaining cheese over. 6. Bake about 20-25 minutes. |
