Apapted from a 1986 post in the New Hampshire Telegraph. A very tasty veggie dish . Ingredients:
1 pound fresh mushrooms |
2 tablespoons butter or margarine |
2 packages frozen spinach, chopped |
1 teaspoon salt |
1/4 cup onion, chopped |
1/4 cup butter or margarine, melted |
1/4 cup cream |
1 cup grated mozzarella cheese |
garlic pressed or chopped |
Directions:
1. Slice and saute mushrooms in 2 tablespoons butter. 2. Cook spinach, and drain well; place in bottom of shallow casserole. Sprinkle with salt, onions and melted butter. 3. Layer 1/2cup grated cheese over spinach. 4. Add mushrooms. 5. Sprinkle with garlic pieces and remaining cheese. 6. Bake 20 minutes at 350 degrees, or 325 degrees in a pyrex baking dish. 7. This can be made a day before and stored, covered, in the refrigerator and baked right before serving. |
