This is a great way to eat mushrooms. These can be used as a side dish or as an appetizer. They are so fully of earthy flavors you will get glowing reviews. Ingredients:
30 large mushrooms |
1-1/2 cups peeled chopped eggplant |
1/4 cup green bell pepper |
1/4 cup chopped white onion |
1 clove minced garlic |
2 tablespoons olive oil |
6 ounce can tomato paste |
2 tablespoons water |
1 tablespoon redwine vinegar |
1-1/2 teaspoons thyme |
1/2 teaspoon salt |
1/8 teaspoon freshly ground black pepper |
Directions:
1. Remove stems from mushrooms then chop 1 cup. 2. Combine chopped mushrooms, eggplant, green pepper, onion, garlic and olive oil in a casserole dish and microwave on high for 6 minutes. 3. Add remaining ingredients then microwave on high for 8 minutes. 4. Place mushroom caps on glass serving tray and loosely cover with waxed paper. 5. Microwave on high for 3 minutes. 6. Fill with eggplant mixture mounding slightly then microwave on high 4 minutes longer. 7. Serve warm. |
