Mushrooms And Vermouth Soup |

My Mom makes this one for me and this is one soup bowl that will be licked clean! The Vermouth is key. Also use fresh mushrooms. Ingredients:
2 pounds of fresh mushrooms, chopped |
6—8 tablespoons of unsalted butter |
3 cups of white onion, finely chopped |
1 tablespoon sugar |
1/4 cup flour |
4 (10 oz.) cans of chicken broth |
2 cups martini rossi vermouth |
Directions:
1. In a large crock pot, melt butter on low heat 2. Sauté the onions until soft 3. Add the sugar 4. Add only 2/3 of the chopped mushrooms 5. Add flour, chicken broth and vermouth 6. Simmer for approximately 2 hours 7. Add remaining mushrooms upon serving 8. Serve with fresh buns for dipping |
