This creamy mushroom and rice dish is an excellent side dish and is so easy to make. A friend served this and I begged her for the recipe and now it's one of our gotta make dishes. Ingredients:
2 tbsp. butter |
1 yellow or white (cooking) onion, chopped |
1 can mushroom pieces & stems (drained) |
1 1/2 cups uncle ben's original long grain rice |
3 cups water |
3 chicken bouillon cubes, squished up |
pinch of ground black pepper (to taste) |
pinch of granulated garlic powder (to taste) |
1 - 2 chopped green onion (for colour) |
Directions:
1. In a medium size pot add together the butter, cooking onion, and mushroom pieces. 2. Stir and sauté until slightly cooked. 3. To the above mixture add water and bring to a boil. 4. Add the rice, bouillon cubes, pepper and garlic powder and stir. 5. Put a lid on the pot and turn it down to low to medium-low. 6. Simmer on low to medium-low heat for 15 minutes. 7. Remove from heat, stir and serve. 8. Add chopped green onion for color. |
