Bursting with flavor, this interesting combination of mushrooms, onions, and yams or sweet potatoes is delightful. Ingredients:
1 yam |
2 cups mushrooms, any kind |
1/2 small onion |
1/2 teaspoon basil |
1/2 teaspoon oregano |
1 teaspoon parsley |
1 pinch garlic |
1/4 teaspoon salt |
1/8 teaspoon pepper |
1 tablespoon red wine |
1/2 teaspoon worcestershire sauce |
water |
Directions:
1. Wash and slice mushrooms. Dice onion. Cut yam into 1-inch pieces. Place mushrooms and onions in a pan sprayed with PAM, cover, and sautee over medium-high heat, stirring occasionally for about 5 minutes. Add all spices and reduce heat to low-medium. Add the yam pieces and cook 5-10 minutes, stirring occasionally and adding a little water if it gets too dry. Cook until the yam is just getting tender and all of it is moist but not watery. |
