Mushroom Wheat Berry Pilaf |

2 tsp olive oil |
1 1/2 cups onion, chopped |
5 cloves garlic, minced |
1 tbs butter |
1 lb mushrooms, sliced |
1 tbs soy sauce |
1/4 cup red wine |
1/4 cup vegetable broth |
1 1/2 cups wheat berries, cooked |
1 1/2 cups long grain and wild rice |
1/4 tsp thyme |
1/4 tsp rosemary |
1 tsp lemon zest |
Directions:
1. Heat olive oil in large pan over low heat; add onions and sweat until soft, about 10 min. 2. Add garlic and continue cooking 5 min. 3. Add butter and melt; add mushrooms and soy sauce, increase heat to medium, and cook 5-10 min. until mushrooms release moisture. 4. Add wine and chicken broth and simmer 5 min. until wine starts to evaporate. 5. Add wheat berries, rice, spices and heat through. 6. Add salt and pepper to taste. |
