Mushroom-Stuffed Pork Chops

Pork Chops stuffed with mushrooms.
Ingredients:
4 pork chops
1/4 cup bread crumbs
1/4 cup chopped onion
1/2 cup chopped shiitaki mushrooms
1 tsp grated ginger
1/8 tsp salt
1/8 tsp black pepper
5 oz orange marmalade
1 cup chopped fresh spinach
Directions:
1. Saute mushrooms and onions until onions are soft.
2. Remove from heat and mix in bread grated ginger, salt and pepper.
3. Add bread crumbs and spinach to mixture and toss until blended.
4. Cut slit in side of each pork chop almost to the bone to create pocket.
5. Fill pocket with mushroom mixture and secure opening with toothpicks.
6. Salt and pepper both sides of pork chop.
7. Preheat grill and set up for indirect cooking.
8. Place pork chops onto unheated part of grill. Cover and cook for 35-40 minutes, turning once, to an internal temperature of 160 degrees.
9. Baste several times with marmalade during last five minutes of cooking.
