3 cups torn iceberg lettuce |
3 cups fresh baby spinach |
1/4 pound sliced fresh mushrooms |
1 cup (4 ounces) shredded part-skim mozzarella cheese |
2 tablespoons chopped red onion |
1 tablespoon real bacon bits |
dressing: |
6 tablespoons vegetable oil |
3 tablespoons sugar |
3 tablespoons cider vinegar |
1/4 to 1/2 teaspoon poppy seeds |
1/8 teaspoon prepared mustard |
Directions:
1. In a large bowl, combine the first six ingredients; set aside. In a jar with a tight-fitting lid, combine the dressing ingredients; shake well. Drizzle over salad; toss to coat. Serve immediately. Refrigerate any leftover dressing. Yield: 8 servings. |
