Cooked Veggie Medley - Portabella mushrooms, fresh spinach, and eggplant Ingredients:
12 oz onions |
5 oz celery |
7 oz mushrooms, portabella |
5 oz eggplant |
12 oz organic baby spinach |
1 tbsp olive oil |
3 tsp garlic |
14.5 oz organic tomatoes |
6 oz tomato sauce |
Directions:
1. Dice all veggies. Saute onions, garlic and celery in oil. Add mushrooms and eggplant. Add tomatoes and sauce. Finally add fresh spinach and let it wilt down. Serve hot. |
