Mushroom Spinach Casserole |

If you love vegetables this is a great side dish Ingredients:
3 (small boxes) of frozen spinach or 2 bags of fresh |
2 large pkgs of sliced mushrooms |
1 large onion chopped |
3 cloves garlic chopped |
1 large pkg shredded cheddar cheese |
parmesean cheese |
salt & pepper |
garlic powder |
olive oil & butter on 2 steps use your judgement (not too much of each so it is not greasy) |
Directions:
1. Cook spinach (frozen according to pkg) till cooked then as follows 2. Cook spinach (if fresh) as follows 3. Cook in olive oil and garlic till tender 4. In large frying pan, saute onions, garlic and mushrooms in a mixture of olive oil and butter till cooked 5. In a butter casserole pan 6. Layer half of spinach mixture, then a layer of mushroom mixture 7. Top with 1/2 pkg of cheese and Parmesean cheese 8. Layer balance in same manner 9. Top with seasoning of salt, pepper and garlic powder 10. Bake 20 minutes in 350 till cheese is melted |
