Mushroom Soup With Spinach and Carrots |

mushroom soup is so monotone, i decided to add some color. its the very first time i made my own mushroom soup and i love it. let me know if you feel the same Ingredients:
500 g chopped mushrooms (any you like but i used the regular white ones) |
1 medium carrot, cut in small cubes |
3 medium red potatoes, cut in small cubes |
3 springs spinach |
2 tablespoons butter |
1 medium onion |
3 garlic cloves |
2 tablespoons flour |
2 cups vegetable stock |
2 cups water |
1 1/2 cups milk |
salt and plenty pepper |
Directions:
1. melt butter in pot,. 2. saute garlic and onion until almost golden brown. 3. add chopped mushrooms. 4. saute for a few minutes 5. add the flour and mix well. 6. add the veg stock. 7. add water. 8. add cubed potato. 9. add shredded spinach. 10. add cubed carrot. 11. add milk. 12. season with salt and pepper. 13. bring to boil. 14. reduce heat and simmer for 15-20 minutes or until flavors blend. 15. let stand for 5 mins,. 16. serve with croutons or fav crackers. 17. enjoy. |
