Mushroom Soup With Chive Cream |

This is a very creamy, very herby, very awesome comforting and tasty soup. Enjoy Ingredients:
1/2 tablespoon olive oil |
1/3 cup finely chopped carrots |
1/3 cup finely chopped celery |
1 large onion chopped |
2 small russet potatoes |
1 teaspoon salt |
1 teaspoon ground black pepper |
1 bay leaf |
1/4 teaspoon dried thyme |
1 quart chicken broth |
5 cups sliced mushrooms |
1/4 cup chopped chives |
3 tablespoons sour cream |
Directions:
1. Heat olive oil in saucepan over medium heat. 2. Add carrots, celery, onion, salt and pepper and cook 10 minutes. 3. Peel and slice potatoes and add to the pot. 4. Add bay leaf, thyme and stock and bring to a boil quickly over high heat. 5. Lower heat and simmer 15 minutes. 6. Add mushrooms and simmer 7 minutes. 7. Blend chives and sour cream together and set aside. 8. Remove bay leaf and puree soup in a blender. 9. Strain then serve soup in bowls with a dollop of chive cream. |
