This great recipe gets better the second day! This is delicious! Ingredients:
2 lb. of sliced fresh brown or white mushrooms |
6 c. of chicken stock |
1/2 c. of chopped green onion |
2 tbsp. of butter |
1 c. of peeled and sliced carrots |
1 c. of sliced onions |
1 c. of sliced leeks (optional) |
1/2 c. of sliced celery |
1 tsp. of fresh thyme leaves |
Directions:
1. First add butter to a pot over medium flame. 2. Saute the carrots, onions, leeks, and the celery. 3. Now cook this until they are tender approx. 10 min. 4. Next stir in the thyme and mushrooms and cook until tender approx. 5 min. 5. Then pour in the stock and season. 6. You will want to cook this over low flame for approx. 30 min. 7. Ladle into serving bowls and serve! 8. Green onions are great on top! |
