This is not your out of the can mushroom soup... It is so full of flavor and I love it as a starter. Ingredients:
1 oz dried wild mushrooms, reconstitute in 1 cup of water, drained and sliced. |
fresh mushrooms sliced , use about 8 oz. |
1 onion, chopped |
1 lb. fresh mushrooms, sliced |
4 tbsp. olive oil or real butter |
1/4 cup flour |
6 cups chicken stock |
salt & pepper |
heavy cream or half and half to taste.. |
Directions:
1. In a soup pot heat oil. 2. Add onions and cook until soft and translucent. 3. Add both mushrooms and cook over med. heat for 5 minutes. 4. Add flour and cook briefly. 5. Add stock, simmer for 45 minutes to 1 hour. 6. You may puree half the soup and/or add about 1 cup of cream or half and half.. (optional) |
