Homemade Ingredients:
6 t butter, unsalted |
1 small onion |
12 oz. button mushrooms |
4 c chicken broth |
1 sprig fresh parsley |
1 salt and pepper |
Directions:
1. Melt 2 T butter over medium heat and add onion. Cook til soft and translucent, about 2 minutes. 2. Add mushrooms and remaining butter. Sweat for 8 minutes. 3. Stir in chicken broth and parsley and bring to a boil. 4. Immediately reduce heat and simmer one hour. 5. Remove parsley and discard. 6. Cool for a few minutes. 7. Transfer to blender and puree. 8. Add salt and pepper, and sherry if using. |
