Vegetarians are often forgotten when barbecues are prepared, with most people concentrating on the meat and the fish. So here are some tasty skewers that everyone can enjoy. If possible use even sized chestnut mushrooms and don't be surprised at the amount of marinade this recipe suggests. The mushrooms absorb an alarming amount of the liquid, which helps them remain moist and succulent when they are grilled. Time does not include marinating. Ingredients:
1 lb plain yogurt |
2 garlic cloves, crushed |
2 lemons, grated rind and juice |
1 teaspoon salt |
1 tablespoon garam masala |
20 chestnut mushrooms, trimmed and wiped |
16 small bay leaves |
Directions:
1. Into the yogurt mix the garlic, lemon, salt and garam masala. 2. Put the mushrooms in a bowl and pour over the marinade. Mix well then cover and chill for at least 4-5 hours. 3. Soak 4 bamboo skewers in hot water for 30 minutes. Thread mushrooms, alternately with bay leaves onto skewers. 4. Barbecue or grill for 8-10 minutes, turning frequently and brushing with marinade during cooking. 5. Serve with a tomato and onion salad and naan bread. |
