                    A simple salad made with mushrooms and scallions is the perfect low calorie side dish for a weeknight meal. Serve with steak or pork loin for a special occasion. Ingredients: 
                    
                        
                                                1/4 cup red wine vinegar  |  
                                                2 minced shallots  |  
                                                1 1/2 teaspoons ground coriander  |  
                                                3/4 teaspoon kosher salt  |  
                                                1/4 teaspoon black pepper  |  
                                                1/2 cup olive oil  |  
                                                3 (10 oz.) packages of small white mushrooms, thinly sliced  |  
                                                4 thinly sliced scallions  |

                                1. Whisk 1/4 cup red wine vinegar, 2 minced shallots, 1 1/2 tsp. ground coriander, 3/4 tsp. kosher salt and 1/4 tsp. black pepper in a medium bowl. 2. Whisk in 1/2 cup olive oil. Stir in 3 (10 oz.) packages of small white mushrooms, thinly sliced, and 4 thinly sliced scallions.
