Mushroom Salad with Maple Dressing |

Maple syrup and lime juice meld in a sweet-sour dressing for sautéed mushrooms and gourmet greens. This salad works well with a dinner featuring ham or pork. Ingredients:
2 tablespoons lime juice |
2 tablespoons maple syrup |
1/4 teaspoon low-sodium soy sauce |
1/4 teaspoon sesame oil |
1/8 teaspoon black pepper |
1 1/2 teaspoons vegetable oil |
cooking spray |
1 (8-ounce) package button mushrooms, quartered |
6 cups gourmet salad greens |
1/3 cup chopped green onions |
1 tablespoon finely chopped fresh cilantro |
Directions:
1. Combine the first 5 ingredients in a small bowl, and stir well with a whisk. 2. Heat vegetable oil in a large nonstick skillet coated with cooking spray over medium-high heat. Add mushrooms; sauté for 6 minutes or until tender. Remove from heat; add maple mixture, tossing to coat. Combine greens, onions, and cilantro in a large bowl. Add mushroom mixture, tossing to coat. Serve immediately. |
