Given to me by a cousin many years ago for a family cookbook. Cook time is chill time. Ingredients:
1/2 lb fresh mushrooms |
1/2 cup salad oil |
1/4 cup wine vinegar |
1 tablespoon soy sauce |
2 tablespoons parsley flakes |
1 teaspoon salt |
1/2 teaspoon garlic powder |
1 tablespoon sugar |
1/4 teaspoon pepper |
2 cups tomatoes, large pieces |
1 cup onion, chopped |
1/3 cup green pepper, chopped |
2 stalks celery, sliced |
Directions:
1. Rinse, pat dry and slice mushrooms. 2. Combine oil, vinegar, parsley, salt, sugar, garlic powder, pepper & soy sauce; mix well. 3. Pour over mushrooms, toss well. 4. Add tomatoes, onion, green pepper & celery. 5. Toss gently. 6. Cover & refrigerate 1 hour. 7. Serve over fresh spinach leaves, if desired. |
