Risotto with garlic and mushrooms Ingredients:
1 1/2 tbsp olive oil |
2/3 cup mushrooms |
1/2 onion, diced |
2 tbsp parsley |
1 tbsp rosemary |
1 1/2 cup arborio rice |
4 cup vegetable broth |
Directions:
1. Heat vegetable broth in a saucepan. 2. Heat 1.5 tbsp olive oil in large skillet. Add onion and garlic and sautee until softened. Add rice to the skilled and stir until white spots appear in the center of the grains (about 1 minute). 3. Add vegetable broth to the pan, 1 ladle at a time, allowing the broth to be completely absorbed before adding another ladle. Stir throughout. Once rice has absorbed all of the broth, add mushrooms, parsley, rosemary, and cheese and blend. |
