From Mom's cookbooks. Serve with Roasted Chicken Supreme Ingredients:
2 tablespoons butter |
1/4 cup chopped onion |
1/2 cup chopped green bell pepper |
1 (8 ounce) can sliced mushrooms |
1 cup rice |
water |
Directions:
1. Melt butter in a saucepan. When foaming subsides, add onion and green pepper. Saute until limp and onion is translucent. 2. Drain liquid from mushroom can into 2-cup measure. Add water to bring volume up to 2 cups. Add mushrooms to saucepan and saute 1 minute. 3. Add rice and liquid. Cover tightly and cook 30 min or until rice is tender. |
