Delicious, hearty quinoa is not a grain but a seed yet very like couscous and extremely good for you. This is an awesome mushroom pilaf-like dish. Ingredients:
1 1/2 cups quinoa |
8 shitake mushrooms |
1/2 cup yellow onion |
4 oz dried mushrooms |
1 tbsp butter |
3 tbsp olive oil |
3 cups low-sodium chicken broth |
Directions:
1. Rinse dried mushrooms with warm water, then soak for 10 minutes in hot chicken broth. Set aside. 2. Dice onions and shitake mushrooms. Saute in butter and olive oil until onions are soft and mushrooms are a little golden. 3. Add quinoa to the onions and shitakes, stir to combine. 4. Add broth with soaked mushrooms. 5. Bring to a boil. Turn down heat, cover and simmer approx. 30 minutes, should have consistency of cooked couscous or rice. |
