This is my own copy-cat of my favorite local Mexican place's Mushroom quesadillas. I think I've got it pretty darn close! Ingredients:
1 large green bell pepper |
1 large onion |
1 lb sliced mushrooms |
grill seasoning, to taste |
1 cup mozzarella cheese |
wheat flour tortilla |
cooking spray |
1 -2 tablespoon butter or 1 -2 tablespoon margarine |
Directions:
1. Slice onions and peppers. 2. Fry onions, peppers and mushrooms in butter. I usually start the onions and peppers a little bit before I add the mushrooms as they take a little longer to cook. 3. Add Grill Seasoning (Such as Montreal Steak seasoning by McCormick) to taste. 4. Place peppers, onions and mushrooms on one half of one side of the tortilla. 5. Add a handful of cheese. 6. Fold tortilla in half. 7. Heat another large skillet. Spray with cooking spray. 8. Place folded tortilla in skillet on one side. 9. Cook about a minute until golden brown. 10. Carefully flip the tortilla to brown other side. 11. Repeat with remaining tortillas and filling. |
