Mushroom, Pepper, and Matzoh Kugel |

Ingredients:
4 eggs |
4 cup(s) farfel |
fresh ground pepper to taste |
1/2 teaspoon(s) ground marjoram |
1/2 teaspoon(s) ground sage |
1 leek-- white part |
2 tablespoon(s) olive oil |
1 onion |
1 pepper |
1/4 teaspoon(s) salt |
1 cup(s) shitake mushrooms, chopped |
4 cup(s) vegetable broth |
Directions:
1. Saute onion and leek until soft. 2. Add pepper and soften. 3. Add mushrooms and saute briefly. 4. Add half a cup of broth and cook down. 5. Soak farfel in broth until softened; press out excess broth. 6. Beat eggs with salt; add vegetables and coat. 7. Mix in farfel, sage, marjoram and pepper. 8. Place in 2 QT casserole coated with PAM. 9. Bake for 30-45 minutes at 375. |
